As we head into another long weekend, we may not be able to gather in a large group but it is still fun to make a special meal for yourself, your household or as a gift for someone else.
This class is great for anyone looking to create a spring inspired menu that can be made day of, ahead of time or is easily transported (porch food drop offs?!)
The class will be about 2 hours and include:
1. Spinach salad w/ candied walnuts and tofu feta: I will show you how to make candied walnuts (or another nut/seed of your choice!) plus my tofu feta and a cherry vinaigrette
2. Pesto potatoes au gratin: Creamy cashew cream and pesto potatoes make a great side dish!
3. Main event: Smoked cheddar quiche w/asparagus: A plant based take on a traditional quiche. You will also learn one of my other cheese, the cashew based smoked gouda. I will also teach a quick pie dough you can use in other recipes! This dish is great for sharing or preparing for a friend!
